Fahsa (Arabic: فحسة) is a Yemeni lamb stew. It’s made with lamb cutlets simmered in lamb broth. After cooking, spices and hilbah (a fenugreek dip) are added for flavor. Traditionally it’s cooked in a stone pot called a madara and served with mulawah bread.
